Smoked chicken Penne pasta

Serves 4

Ingredients:

  • 12 oz. Shredded smoked chicken
  • 4 Tbs diced black olives
  • 2 oz. Extra Virgin olive oil
  • 4 Tbs minced sundried tomatoes
  • 2 Tbs chopped shallots
  • 1 Tbs chopped garlic
  • 2 Tbs Dijon mustard
  • 1 Tbs chopped parsley
  • 2 cups chicken broth
  • 1 tsp chopped tarragon
  • 6 cups cooked penne pasta
  • 1 tsp chopped sage
  • 4 oz. Shredded Romano cheese
  • Salt & pepper to taste

Method:

Cook off your penne pasta and set aside until needed. Preheat a large stainless steel sauté pan over high heat. As the pan is heating up add to the pan olive oil, shallots, garlic, parsley, tarragon, sage and the black olives. Sauté these ingredients over high heat for one to two minutes. Add sundried tomatoes, Dijon mustard, chicken broth, and smoked chicken. Cook till half reduces liquid. Add penne pasta to pan and cook the pasta into the sauce for 3-4 minutes. Season with the salt and pepper. Divide among four plates and serve garnish with Romano cheese. Enjoy!
